Grain Free Krispie Bars? Yes please! Krispie Bars – a major kid favorite – come in many versions, from pure pesticide laden junk to more wholesome snacks. I’m always looking for the cleaner and hypoallergenic options for clients of my pediatric nutrition practice, and Krispie Bars are a keeper for sure. How do you do Krispie Bars for kids with conditions that make grains or sugary treats hard to tolerate?

This super simple Grain Free Krispie Bars recipe is the answer. This recipe is made super easy thanks to LoveBird Unsweetened Cereal, a God-send for kids who don’t do well with grains, artificial ingredients, or excess sugars. (This rendition of an “O’s” cereal is also great for little ones learning to finger feed and try new textures.) Though I use unsweetened sunflower butter here, you can use any nut or seed butter you like – whatever your kids like and can safely tolerate. You can embellish Grain Free Krispie Bars with chocolate chips, nuts, or raisins too.

A word on chocolate chips: If your child has allergy or sensitivity to gluten or milk proteins, look for a dark chocolate chip without those ingredients – here’s one. If your child does badly with cane sugar, look for chocolate chips sweetened with stevia or a small amount of erythritol, like this one. Erythritol gets plenty of bad press, but allowing small excursions such as in a few chocolate chips is not an issue, per my observation across 25 years in pediatric nutrition practice. If it makes it possible for your child to have a special treat, then I’m for it. As for stevia, pure organic stevia is a helpful sweetener that may even confer some health benefits. It too is present in minute amounts in something like a chocolate chip.

These come together fast and need an hour or so in the fridge to firm up. Enjoy!

Instructions
  1. Line an 8 x 8 inch baking pan or dish with parchment paper and set aside.
  2. Combine sunflower butter, honey, vanilla and salt in a microwave safe bowl. Heat gently to soften. Stir until smoothly blended.
  3. Transfer to a larger bowl and add 3 cups cereal. Combine thoroughly to coat all the cereal. Include any extras you like such as chocolate chips, raisins, or nuts and combine evenly.
  4. Press cereal mixture into the prepared 8 x 8 inch pan. Place in refrigerator for 1 hour to firm.
  5. Cut into squares once firm. Keep refrigerated for best texture.
